Eat Your Greens and Love it

Just in time for summer picnics, here is a simple yummy and portable recipe from a great new book called Eat Your Greens: the Surprising Power of Home Grown Leaf Crops:   Eat Your Greens book

David Kennedy has really broken new ground with this one, showing American gardeners how to grow and use the superfood greens of the tropics. Why beat your head against the wall trying to grow traditional greens in the summer, when you can grow things that crave the heat and are like a green vitamin pill!

Savory Malabar Bars

3 eggs
1 cup flour
1 c milk
1 tsp salt
1 tsp baking powder
½ lb cheddar cheese, grated
1 sm onion, chopped fine
2 cups cooked Malabar Spinach or other greens, drained well

Mix it all together. Pour into a greased 9x13inch pan. Bake at 350 degrees for 45 minutes. Let cool some before cutting into bars. Pack up and take with you on your next outdoor adventure.
I said it was simple!
